Description

A wholesome dish bursting with flavor, featuring creamy feta, roasted cherry tomatoes, and fresh spinach, perfect for brunch or dinner.


Ingredients

  • 200g Feta cheese
  • 250g Cherry tomatoes
  • 1 Chopped red bell pepper
  • 100g Fresh spinach
  • 4 Eggs
  • 2 tbsp Olive oil
  • Salt, to taste
  • Pepper, to taste


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Add the feta cheese, cherry tomatoes, and chopped red bell pepper to a baking dish or individual ramekins.
  3. Drizzle with olive oil and season generously with salt and pepper.
  4. Place the dish in the oven and bake for about 20 minutes, or until the tomatoes are softened.
  5. Carefully remove from the oven and crack the eggs on top of the mixture.
  6. Return to the oven and bake for an additional 10-15 minutes, or until the eggs reach your desired level of doneness.
  7. Before serving, stir in the fresh spinach.

Notes

Feel free to substitute feta with a different cheese if desired. Use fresh ingredients for the best flavor.
