A wholesome dish bursting with flavor, featuring creamy feta, roasted cherry tomatoes, and fresh spinach, perfect for brunch or dinner.
Ingredients
- 200g Feta cheese
- 250g Cherry tomatoes
- 1 Chopped red bell pepper
- 100g Fresh spinach
- 4 Eggs
- 2 tbsp Olive oil
- Salt, to taste
- Pepper, to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Add the feta cheese, cherry tomatoes, and chopped red bell pepper to a baking dish or individual ramekins.
- Drizzle with olive oil and season generously with salt and pepper.
- Place the dish in the oven and bake for about 20 minutes, or until the tomatoes are softened.
- Carefully remove from the oven and crack the eggs on top of the mixture.
- Return to the oven and bake for an additional 10-15 minutes, or until the eggs reach your desired level of doneness.
- Before serving, stir in the fresh spinach.
Notes
Feel free to substitute feta with a different cheese if desired. Use fresh ingredients for the best flavor.
