Description

A delightful twist on the classic taco, perfect for breakfast or brunch with crispy bacon, flavorful potatoes, fluffy eggs, and Monterey Jack cheese.


Ingredients

  • 4 slices bacon
  • 2 tbsp canola oil
  • 4 cups potatoes, cut into 1-inch cubes
  • 2 1/2 tbsp taco seasoning mix
  • 8 soft corn tortillas (6-inch)
  • 8 eggs, well beaten
  • 1/2 cup shredded Monterey Jack cheese


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Lay the bacon on a baking sheet and bake for about 10 minutes until crispy. Once cooked, chop it into bite-sized pieces.
  3. In a skillet, heat the canola oil over medium heat. Add the cubed potatoes along with the taco seasoning and sauté for about 15-20 minutes until soft and golden brown.
  4. While the potatoes are cooking, arrange the tortillas in a 13×9-inch baking dish.
  5. In another skillet, scramble the beaten eggs until just set.
  6. Fill each tortilla with a layer of seasoned potatoes, scrambled eggs, chopped bacon, and a sprinkle of cheese.
  7. Place the baking dish in the oven and bake for approximately 10 minutes, or until heated through and the cheese is melted.
  8. Serve immediately and enjoy!

Notes

For spicier tacos, add jalapeños or hot sauce. These tacos can also be served with salsa or avocado slices.
