A rich and hearty beef stew perfect for warming up on chilly evenings.
Ingredients
- 2 lbs beef chuck, cut into 1-inch cubes
- 4 cups beef broth
- 2 large carrots, sliced
- 2 potatoes, diced
- 1 onion, diced
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Olive oil for browning the meat
Instructions
- Heat a splash of olive oil in a large pot over medium heat.
- Brown the beef cubes in batches, making sure to get a nice sear on all sides. Once done, remove the meat and set it aside.
- In the same pot, add the diced onions and minced garlic. Sauté until they are softened and fragrant.
- Stir in the tomato paste, Worcestershire sauce, thyme, and rosemary, mixing until everything is well combined.
- Return the seared beef to the pot and pour in the beef broth. Add the carrots and potatoes.
- Bring the mixture to a boil, then reduce the heat and let it simmer for 90-120 minutes, until the beef is tender and the flavors meld beautifully.
- Season with salt and pepper to taste before serving.
Notes
To enhance flavor, let the stew sit for a few hours or overnight. For added richness, include a splash of red wine while sautéing onions.
