Description

A rich and hearty beef stew perfect for warming up on chilly evenings.


Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 4 cups beef broth
  • 2 large carrots, sliced
  • 2 potatoes, diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Olive oil for browning the meat


Instructions

  1. Heat a splash of olive oil in a large pot over medium heat.
  2. Brown the beef cubes in batches, making sure to get a nice sear on all sides. Once done, remove the meat and set it aside.
  3. In the same pot, add the diced onions and minced garlic. Sauté until they are softened and fragrant.
  4. Stir in the tomato paste, Worcestershire sauce, thyme, and rosemary, mixing until everything is well combined.
  5. Return the seared beef to the pot and pour in the beef broth. Add the carrots and potatoes.
  6. Bring the mixture to a boil, then reduce the heat and let it simmer for 90-120 minutes, until the beef is tender and the flavors meld beautifully.
  7. Season with salt and pepper to taste before serving.

Notes

To enhance flavor, let the stew sit for a few hours or overnight. For added richness, include a splash of red wine while sautéing onions.
