Description

Delicate and tender crepes that are perfect for sweet or savory fillings, ideal for brunch or dessert.


Ingredients

  • 1 cup (125 g) all-purpose flour, sifted
  • 2 large eggs, room temperature
  • 1 1/4 cups (300 ml) milk
  • 2 tbsp melted unsalted butter, plus extra for the pan
  • 1 tbsp granulated sugar (optional)
  • 1/4 tsp salt
  • 1/2 tsp vanilla extract (optional)


Instructions

  1. In a medium bowl, whisk together the sifted flour, sugar (if using), and salt until evenly combined.
  2. In a separate bowl, whisk together the eggs, milk, melted butter, and vanilla until smooth and slightly frothy.
  3. Pour the wet mixture gradually into the dry ingredients while whisking constantly to prevent lumps. Stop when the batter is smooth and thin.
  4. Cover the bowl with plastic wrap and let the batter rest at room temperature for 20–30 minutes.
  5. Heat a nonstick pan over medium-low and brush it lightly with melted butter.
  6. Pour about 1/4 cup of batter into the pan, tilt to spread a thin layer.
  7. Cook until the edges lift and the bottom is pale gold, about 45–60 seconds, then flip and cook for an additional 20–30 seconds.
  8. Transfer to a plate and cover loosely to keep warm. Serve immediately.

Notes

For dairy-free crepes, use plant milk and melted coconut oil. Ensure the batter rests for tender crepes.
