Description

A comforting and moist banana loaf infused with the classic flavors of cinnamon and sugar, offering a delightful twist on traditional quick bread.


Ingredients

  • 3 ripe bananas, mashed
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1/2 cup unsalted butter, melted (or oil)
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon (for batter)
  • 1/4 cup milk
  • 2 tablespoons granulated sugar (for topping)
  • 1 teaspoon ground cinnamon (for topping)


Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour a 9×5-inch loaf pan.
  2. Mash the bananas in a large bowl until mostly smooth, with a few small lumps.
  3. Add the granulated sugar, brown sugar, melted butter, eggs, and vanilla to the mashed bananas, stirring until well blended.
  4. In another bowl, whisk together flour, baking powder, baking soda, salt, and 1 teaspoon of cinnamon.
  5. Gradually add the dry mixture to the wet ingredients in two to three additions, alternating with the milk, stirring gently until just combined.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. For the topping, mix 2 tablespoons of sugar with 1 teaspoon of cinnamon and sprinkle evenly over the batter.
  8. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the loaf rest in the pan for 10 minutes before transferring to a wire rack to cool completely.
  10. Slice and enjoy warm or at room temperature!

Notes

Use riper bananas for added sweetness. Adjust spices and toppings to personal preference.
