Ingredients
- 8 oz spaghetti or fettuccine
- 4 oz smoked salmon, cut into pieces
- 2 large eggs
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- Salt and black pepper, to taste
- 2 tbsp olive oil
- Chopped fresh parsley for garnish
Instructions
- Cook the spaghetti or fettuccine according to package instructions until al dente, reserving 1/2 cup of the pasta water before draining.
- While the pasta cooks, whisk together the eggs, heavy cream, and Parmesan cheese in a bowl; set aside.
- In a large skillet, heat the olive oil over medium heat; add the minced garlic and sauté until fragrant, about 1 minute.
- Lower the heat and add the smoked salmon to the skillet, stirring to combine with the garlic.
- Toss the drained pasta into the skillet, ensuring it’s well-coated.
- Remove the skillet from heat, and quickly mix in the egg and cream combination; add in reserved pasta water if the sauce feels too thick.
- Season generously with salt and black pepper; garnish with freshly chopped parsley before serving.
Notes
For added flavor, consider a squeeze of lemon juice just before serving. Serve warm with extra Parmesan on top.
