Ingredients

  • 4 boneless, skinless chicken breasts (about 1.52 lb total)
  • 1 can (15 oz) crushed tomatoes
  • 1 cup heavy cream
  • 1 cup fresh basil, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste


Instructions

  1. Place chicken breasts in a single layer in the bottom of the slow cooker. Pat dry.
  2. In a bowl, whisk crushed tomatoes, heavy cream, minced garlic, salt, and pepper until smooth.
  3. Pour the tomato-cream mixture over the chicken, ensuring each breast is covered.
  4. Cover and cook on Low for 6–8 hours or on High for 4 hours.
  5. About 30 minutes before serving, stir in the chopped basil.
  6. Serve chicken and sauce over rice, polenta, or pasta.
