Description

A visually stunning and satisfying culinary experience featuring tender shrimp, creamy avocado, and crunchy vegetables, all drizzled with a spicy mayo.


Ingredients

  • 1 lb medium shrimp, peeled and deveined
  • 2 cups cooked jasmine or brown rice
  • ½ cup mayonnaise
  • 1-2 tablespoons sriracha (adjust to your spice preference)
  • 1 avocado, sliced
  • 1 cup shredded carrots
  • 1 cup cucumber slices
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon cayenne pepper (optional)
  • 1 tablespoon rice vinegar (optional)
  • 2 green onions, chopped
  • 2 tablespoons sesame seeds (optional)
  • Soy sauce or tamari for drizzling (optional)


Instructions

  1. In a mixing bowl, combine shrimp with olive oil, smoked paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper (if using).
  2. Heat a non-stick skillet over medium-high heat.
  3. Add the seasoned shrimp and cook for about 3–4 minutes, or until they turn pink and opaque.
  4. While the shrimp is cooking, mix mayonnaise with sriracha and a touch of rice vinegar in a separate bowl to create the spicy mayo.
  5. To assemble the bowls, layer cooked rice at the bottom, pile on the cooked shrimp, then add your cucumbers, carrots, and sliced avocado.
  6. Drizzle generously with spicy mayo and top with green onions and sesame seeds if desired. For an extra flavor bomb, add a splash of soy sauce or tamari.

Notes

Consider adding fresh herbs like cilantro or basil for extra flavor. Also delicious alongside miso soup or a fresh salad.
