Description

Ingredients

  • 2 cans refried beans (pinto or black; low-sodium preferred)
  • 1 tablespoon olive oil or butter
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and freshly ground black pepper, to taste
  • Optional: splash of chicken or vegetable broth
  • Optional toppings: shredded cheese, fresh cilantro, diced tomatoes, sour cream


Instructions

  1. Heat olive oil or butter in a skillet over medium heat until shimmering.
  2. Add the finely diced onion and sauté until translucent and soft, about 3-4 minutes.
  3. Stir in garlic and cook for about 1 minute, until fragrant.
  4. Add both cans of refried beans, cumin, and chili powder to the skillet.
  5. Stir well, breaking up large lumps, and reduce heat to low. Simmer for 5-10 minutes.
  6. If too thick, add a splash of broth to achieve desired creaminess.
  7. Season with salt and pepper. Serve warm with toppings.

Notes

For extra silkiness, blend half the beans with a little broth. Adjust thickness by thinning with broth as needed.
