Description

Deliciously crisp on the outside and fluffy on the inside, these baked potatoes are a perfect side for any meal.


Ingredients

  • 4 large russet baking potatoes
  • 4 tablespoons olive oil
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste


Instructions

  1. Preheat the oven to 425°F (220°C) and position a rack in the center.
  2. Scrub each potato under running water, then pat completely dry with a towel.
  3. Rub 1 tablespoon of olive oil over each potato and sprinkle with salt and pepper.
  4. Prick each potato with a fork several times (4–6 pricks).
  5. Place the potatoes directly on the oven rack and bake for 45–60 minutes, testing for doneness with a fork.
  6. Remove from the oven and let rest for 5 minutes before serving.

Notes

You can use avocado oil for a higher smoke point. If you prefer lower sodium, reduce the salt on the skin and finish with lightly salted toppings.
