Description

A delightful blend of red snapper and creamy shrimp grits seasoned with Cajun spices for a comforting yet sophisticated meal.


Ingredients

  • 240 g stone-ground grits
  • 960 ml chicken broth or water
  • 240 ml heavy cream
  • 28 g unsalted butter, plus additional for cooking
  • 60 g shredded cheddar cheese
  • Salt, to taste
  • Black pepper, to taste
  • 225 g large shrimp, peeled and deveined
  • 15 ml olive oil
  • 1 tablespoon Cajun seasoning
  • 2 garlic cloves, minced
  • 2 red snapper fillets (about 170 g each)
  • 120 ml chicken broth
  • 1 tablespoon Cajun seasoning (for the snapper)
  • 1 teaspoon smoked paprika
  • 50 g grated Parmesan cheese
  • 1 teaspoon hot sauce (optional)


Instructions

  1. In a medium saucepan, boil the chicken broth. Gradually whisk in the grits, stirring frequently. Reduce heat to low and cook uncovered for 20 to 25 minutes until thickened.
  2. Stir in the heavy cream, unsalted butter, and cheddar cheese. Season with salt and black pepper. Cover to keep warm.
  3. Toss shrimp with Cajun seasoning in a bowl. In a skillet, heat olive oil and butter. Sauté garlic until fragrant, then add shrimp. Cook for 2 to 3 minutes per side until pink. Set shrimp aside.
  4. Pat red snapper dry and season with Cajun seasoning. In the same skillet, add olive oil and butter. Cook snapper fillets for 3 to 4 minutes per side until golden and cooked through. Remove and set aside.
  5. In the same skillet, melt butter over medium heat. Add garlic and sauté for 1 minute. Stir in Cajun seasoning, smoked paprika, and chicken broth; simmer for 2 minutes. Add heavy cream, stir, and simmer for another 2 minutes. Add Parmesan cheese and optional hot sauce, cooking until smooth.
  6. To serve, spoon grits onto plates, place red snapper on top, and arrange shrimp over the fish. Drizzle with Cajun cream sauce.

Notes

For a lighter version, consider using low-fat cream or substituting half the heavy cream with chicken broth. Adjust the Cajun seasoning to your taste for more or less spice.
