Description

A warm and cozy Pumpkin Cottage Cheese Bake that serves as a comforting dessert and a protein-rich breakfast. It combines pumpkin puree and cottage cheese for a creamy texture, without the heaviness of traditional recipes.


Ingredients

  • 1 cup pumpkin puree
  • 1 cup cottage cheese
  • 1/2 cup rolled oats
  • 1/2 cup sweetener (honey or maple syrup)
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon fine salt
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Optional: 2–3 tablespoons chopped nuts or mixed seeds for topping


Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8×8-inch baking dish.
  2. In a large bowl, combine pumpkin puree, cottage cheese, oats, sweetener, cinnamon, nutmeg, and salt. Stir until evenly mixed.
  3. Beat in the eggs and vanilla until the batter is smooth and uniform.
  4. Pour the mixture into the prepared dish and smooth the top. Sprinkle nuts or seeds if using.
  5. Bake for 30–35 minutes, until the center is set and the top is lightly golden. A toothpick should come out mostly clean.
  6. Allow to cool for 10–15 minutes before slicing. Serve warm or at room temperature.

Notes

For a smoother texture, blend cottage cheese before mixing. If using fresh pumpkin, roast and puree it first.
