Ingredients
- 4 cups cooked, cubed chicken breasts
- 1 cup sour cream
- 1 (10.5 oz) can condensed cream of chicken soup
- 1/2 cup melted butter
- 2 tablespoons poppy seeds
- 1 cup crushed Ritz crackers
- Optional: 2 cups cooked white rice
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- In a large bowl, stir together the cooked chicken, sour cream, cream of chicken soup, melted butter, and poppy seeds until combined.
- If using, fold in the cooked rice.
- Transfer the filling to the prepared baking dish and spread into an even layer.
- Mix crushed Ritz crackers with reserved melted butter and sprinkle over the casserole.
- Bake uncovered for 30–35 minutes until bubbly and golden.
- Let the casserole rest for 5 minutes before serving.
Notes
Serve with steamed vegetables or over a bed of greens for a lighter meal. Can be made ahead and stored in the refrigerator for up to 24 hours before baking.
