Ingredients

  • 4 salmon fillets (approximately 6 ounces each)
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup fresh or canned pineapple, diced and well-drained
  • 1/4 cup packed light brown sugar
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon minced garlic
  • 1/2 teaspoon grated fresh ginger (optional)
  • 1 tablespoon fresh parsley, chopped (for garnish)


Instructions

  1. Preheat your oven to 400°F (200°C) and grease the baking dish.
  2. Whisk together brown sugar, soy sauce, rice vinegar, minced garlic, and optional ginger to create the glaze.
  3. Pat the salmon fillets dry and rub with olive oil, then season with salt and pepper.
  4. Place the salmon skin-side down in the dish and spoon two-thirds of the glaze over them. Scatter diced pineapple around.
  5. Bake for 12-15 minutes until the salmon is opaque and flakes easily.
  6. If desired, broil for an additional 1-2 minutes for caramelization.
  7. Let the salmon rest for 5 minutes before serving, garnished with parsley and drizzled with pan juices.
