Description

Irresistible chicken thighs in a tangy balsamic glaze, cooked all in one pan for easy cleanup. Perfect for busy weeknights or gatherings.


Ingredients

  • 4 bone-in chicken thighs
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 cup cherry tomatoes
  • 1 cup spinach


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, mix together balsamic vinegar, olive oil, minced garlic, dried thyme, and season with salt and pepper.
  3. Coat the chicken thighs in the marinade, making sure they’re well covered.
  4. Place the marinated chicken thighs in a large oven-safe skillet and pour any leftover marinade over the top.
  5. Scatter cherry tomatoes around the chicken for flavor and color.
  6. Slide the skillet into the oven and bake for 25-30 minutes, until the chicken is cooked through.
  7. In the final 5 minutes of cooking, toss in some fresh spinach to wilt, adding a lovely touch.
  8. Serve warm, and bask in the compliments!

Notes

For an extra crispy skin, broil the chicken for the last 2-3 minutes of cooking.
