Ingredients
- 4 bone-in chicken thighs
- 1/4 cup balsamic vinegar
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 cup cherry tomatoes
- 1 cup spinach
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, mix together balsamic vinegar, olive oil, minced garlic, dried thyme, and season with salt and pepper.
- Coat the chicken thighs in the marinade, making sure they’re well covered.
- Place the marinated chicken thighs in a large oven-safe skillet and pour any leftover marinade over the top.
- Scatter cherry tomatoes around the chicken for flavor and color.
- Slide the skillet into the oven and bake for 25-30 minutes, until the chicken is cooked through.
- In the final 5 minutes of cooking, toss in some fresh spinach to wilt, adding a lovely touch.
- Serve warm, and bask in the compliments!
Notes
For an extra crispy skin, broil the chicken for the last 2-3 minutes of cooking.
