Description

These muffins are a delightful treat made with overripe bananas, filled with warm cinnamon and nutty swirls, perfect for breakfast or a cozy snack.


Ingredients

  • 2 cups All-Purpose Flour
  • 1 cup Brown Sugar
  • 1 teaspoon Ground Cinnamon
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 3 medium Ripe Bananas
  • 2 large Eggs
  • 1 teaspoon Vanilla Extract
  • 1/2 cup Chopped Walnuts (optional)
  • 1/2 cup Butter, melted
  • 1/4 cup Brown Sugar and Cinnamon Mixture (for the swirl)


Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your muffin tin with paper liners or a light greasing.
  2. Mash the ripe bananas in a bowl until smooth.
  3. In a large bowl, whisk together the flour, baking soda, salt, cinnamon, and brown sugar until well combined.
  4. Add the mashed bananas, eggs, melted butter, and vanilla extract to the dry mixture. Stir gently until just combined.
  5. In a small bowl, combine the remaining brown sugar and cinnamon for the swirl mixture.
  6. Spoon half of the muffin batter into the prepared muffin tin and sprinkle a layer of the cinnamon-sugar mixture on top.
  7. Add the remaining batter over the swirl and top with more of the cinnamon-sugar mix if desired.
  8. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  9. Allow the muffins to cool slightly in the tin before transferring them to a wire rack.

Notes

Ensure bananas are ripe for maximum sweetness. Don’t overmix the batter to avoid tough muffins.
