These muffins are a delightful treat made with overripe bananas, filled with warm cinnamon and nutty swirls, perfect for breakfast or a cozy snack.
Ingredients
- 2 cups All-Purpose Flour
- 1 cup Brown Sugar
- 1 teaspoon Ground Cinnamon
- 1 teaspoon Baking Soda
- 1/2 teaspoon Salt
- 3 medium Ripe Bananas
- 2 large Eggs
- 1 teaspoon Vanilla Extract
- 1/2 cup Chopped Walnuts (optional)
- 1/2 cup Butter, melted
- 1/4 cup Brown Sugar and Cinnamon Mixture (for the swirl)
Instructions
- Preheat your oven to 350°F (175°C) and prepare your muffin tin with paper liners or a light greasing.
- Mash the ripe bananas in a bowl until smooth.
- In a large bowl, whisk together the flour, baking soda, salt, cinnamon, and brown sugar until well combined.
- Add the mashed bananas, eggs, melted butter, and vanilla extract to the dry mixture. Stir gently until just combined.
- In a small bowl, combine the remaining brown sugar and cinnamon for the swirl mixture.
- Spoon half of the muffin batter into the prepared muffin tin and sprinkle a layer of the cinnamon-sugar mixture on top.
- Add the remaining batter over the swirl and top with more of the cinnamon-sugar mix if desired.
- Bake for 18-20 minutes or until a toothpick inserted comes out clean.
- Allow the muffins to cool slightly in the tin before transferring them to a wire rack.
Notes
Ensure bananas are ripe for maximum sweetness. Don’t overmix the batter to avoid tough muffins.
