A bright and tangy snack packed with protein, these lemon blueberry bites are quick to make and perfect for on-the-go breakfasts or light desserts.
Ingredients
- 1 cup low-fat cottage cheese
- 1 cup fresh blueberries (plus extra for garnish)
- 1 tablespoon lemon zest (about 1 lemon)
- 2 tablespoons honey (or maple syrup for a vegan option)
- 1/2 cup almond flour
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- In a medium mixing bowl, gently combine the cottage cheese, blueberries, lemon zest, honey (or maple syrup), almond flour, vanilla, and a pinch of salt.
- Cover and chill the mixture in the refrigerator for 15–20 minutes.
- After chilling, use a tablespoon or small cookie scoop to portion out the mixture, and roll into tight balls.
- Place the rolled bites on a parchment-lined tray.
- Optional: Preheat the oven to 325°F (160°C) and bake the bites for 8–10 minutes for a drier exterior.
- Let cool briefly, then serve garnished with extra blueberries and a drizzle of honey if desired.
Notes
For a nut-free version, substitute almond flour with oat flour. For a dairy-free option, use a plant-based cottage cheese alternative or a mixture of silken tofu and coconut yogurt.
