Description
Delicate, paper-thin sweet crepes that are versatile for breakfast, dessert, or a quick elegant snack.
Ingredients
- 1 cup all-purpose flour
- 2 large eggs
- 1 1/2 cups milk
- 2 tablespoons melted butter
- 2 tablespoons sugar
- 1 teaspoon vanilla extract
- A pinch of salt
Instructions
- In a mixing bowl, whisk together the flour, eggs, milk, melted butter, sugar, vanilla, and salt until the batter is very smooth and pourable.
- Let the batter rest for about 20-30 minutes if possible.
- Warm a non-stick skillet over medium heat and lightly grease it.
- Pour about 1/4 cup of batter into the center of the pan and quickly lift and tilt the pan to spread the batter into a thin layer.
- Cook for 1-2 minutes until the edges lift and the bottom is light golden, then flip and cook for an additional 30-60 seconds.
- Stack finished crepes and keep them warm in a low oven if making many.
- Add desired fillings or toppings and serve immediately.
Notes
Measure flour by spooning it into the cup and leveling. Use melted butter that is cool to avoid scrambling the eggs when mixed.
