Description

A quick and satisfying stir fry featuring shrimp, high-protein noodles, and vibrant vegetables, all cooked in one pan.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 8 ounces high-protein noodles (chickpea or lentil-based)
  • 2 cups mixed fresh vegetables (bell peppers, broccoli, snap peas)
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste
  • Optional toppings: sesame seeds, sliced green onions


Instructions

  1. Cook the high-protein noodles according to package instructions. Drain and set aside.
  2. In a large pan, heat olive oil over medium heat.
  3. Add the minced garlic and ginger, sauté until fragrant.
  4. Toss in the shrimp and cook for about 3-4 minutes until they turn pink.
  5. Add the mixed vegetables and stir-fry for 2-3 minutes until tender.
  6. Pour in the soy sauce and add the cooked noodles, tossing everything together to combine.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with optional sesame seeds and green onions if desired.

Notes

Best served hot and fresh. Store leftovers in an airtight container for up to 3 days, or freeze for up to 3 months.
