Ingredients
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup unsalted butter, softened
- 1 tablespoon honey or maple syrup
- 1 cup cottage cheese
- 1/2 cup milk
- 2 tablespoons milk or melted butter for brushing
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together flour, baking powder, salt, and black pepper.
- In another bowl, beat softened butter with honey or maple syrup until creamy.
- Stir in cottage cheese and milk until evenly combined.
- Gradually fold the dry ingredients into the wet mixture until a shaggy dough forms, being careful not to overmix.
- Turn dough onto a lightly floured surface and gently knead 3–4 times.
- Pat or roll the dough to about 1-inch thickness, then cut rounds and place them on the prepared sheet.
- Brush the tops with milk or melted butter.
- Bake for 15–20 minutes, rotating the sheet halfway through, until lightly browned.
- Let cool a few minutes and serve warm.
Notes
These biscuits are best eaten fresh but can be stored at room temperature for 1–2 days. Freeze for longer storage.
