Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 avocados, diced
  • 1 cup corn (fresh or canned)
  • 1 bell pepper, diced
  • 1 lime, juiced

Instructions

  1. Preheat your grill to medium-high heat.
  2. In a bowl, toss shrimp with olive oil, garlic powder, paprika, salt, and pepper until well coated.
  3. Grill the shrimp for about 2-3 minutes on each side, or until they are fully cooked and opaque.
  4. In a separate bowl, combine diced avocados, corn, bell pepper, lime juice, and a pinch of salt, mixing gently.
  5. To assemble, place a generous scoop of corn salsa in each bowl and top with grilled shrimp. Garnish with fresh cilantro.

Notes

For added texture, serve with crunchy tortilla chips or a zesty salad. Leftovers should be stored separately in airtight containers; consume shrimp within 2-3 days and salsa within 1-2 days.
