Description

A light yet satisfying salad featuring grilled chicken, fresh veggies, and vibrant flavors, perfect for dinner or a hearty lunch.


Ingredients

  • 2 chicken breasts
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Mixed salad greens (lettuce, spinach, arugula)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1 bell pepper, sliced
  • 1/4 red onion, thinly sliced
  • 1/4 cup feta cheese (optional)
  • Balsamic vinaigrette or dressing of choice


Instructions

  1. Preheat your grill to medium-high heat.
  2. Brush the chicken breasts with olive oil and season generously with salt and pepper.
  3. Grill the chicken for 6-7 minutes on each side or until fully cooked and no longer pink in the center.
  4. Remove from the grill and let the chicken rest for a few minutes before slicing.
  5. In a large bowl, combine mixed salad greens, cherry tomatoes, cucumber, bell pepper, and red onion.
  6. Add the sliced grilled chicken on top of the salad.
  7. If desired, sprinkle with feta cheese for a creamy finish.
  8. Drizzle with balsamic vinaigrette or your favorite dressing, and toss gently to combine.
  9. Serve immediately and enjoy!

Notes
