Ingredients
- 2 chicken breasts
- 1 tablespoon olive oil
- Salt and pepper to taste
- Mixed salad greens (lettuce, spinach, arugula)
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1 bell pepper, sliced
- 1/4 red onion, thinly sliced
- 1/4 cup feta cheese (optional)
- Balsamic vinaigrette or dressing of choice
Instructions
- Preheat your grill to medium-high heat.
- Brush the chicken breasts with olive oil and season generously with salt and pepper.
- Grill the chicken for 6-7 minutes on each side or until fully cooked and no longer pink in the center.
- Remove from the grill and let the chicken rest for a few minutes before slicing.
- In a large bowl, combine mixed salad greens, cherry tomatoes, cucumber, bell pepper, and red onion.
- Add the sliced grilled chicken on top of the salad.
- If desired, sprinkle with feta cheese for a creamy finish.
- Drizzle with balsamic vinaigrette or your favorite dressing, and toss gently to combine.
- Serve immediately and enjoy!
