Ingredients
- 3 ripe bananas, mashed
- 1/3 cup unsalted butter, melted (or coconut oil for dairy-free)
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- A pinch of salt
- 1 cup gluten-free flour
- 1/2 cup cocoa powder
- 1/2 cup sugar
- 1/2 cup chocolate chips (semi-sweet or dark)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
- In a mixing bowl, combine the mashed bananas and melted butter until well blended.
- Stir in the vanilla extract, baking soda, and a pinch of salt until everything is incorporated.
- Gradually mix in the gluten-free flour, cocoa powder, and sugar until just combined; be careful not to overmix!
- Gently fold in the chocolate chips, ensuring they’re evenly distributed.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for 50-60 minutes, until a toothpick inserted in the center comes out clean.
- Allow cooling in the pan for a few minutes before transferring to a wire rack to cool completely before slicing.
Notes
Use very ripe bananas for the best flavor and texture. Avoid overmixing the batter for a fluffy bread.
