Description

A comforting slow-cooker meal featuring tender chicken thighs and flavorful potatoes, all infused with a savory garlic-Parmesan crust.


Ingredients

  • 4 chicken thighs (boneless or bone-in; skinless preferred)
  • 4 medium potatoes, diced (Russet or Yukon Gold)
  • 1/2 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 1/4 cup chicken broth (low-sodium recommended)
  • 2 tablespoons olive oil
  • Fresh parsley, chopped, for garnish


Instructions

  1. In a medium bowl, combine the grated Parmesan, minced garlic, Italian seasoning, and a pinch of salt and pepper. Stir to blend and set aside.
  2. Spread the diced potatoes evenly across the bottom of the slow cooker.
  3. Season the chicken thighs with salt and pepper on both sides. Place them in a single layer on top of the potatoes.
  4. Drizzle the olive oil and pour the chicken broth over the chicken and potatoes.
  5. Sprinkle the Parmesan–garlic mixture evenly over the chicken, tucking some under the skin if using bone-in thighs.
  6. Cover and cook on LOW for 6–8 hours until the chicken is tender and falling off the bone.
  7. Before serving, garnish with chopped fresh parsley.

Notes

For a crispy finish, broil the chicken for 2–3 minutes after slow cooking. Adjust salt after cooking, especially if using regular broth.
