Description
A comforting slow-cooker meal featuring tender chicken thighs and flavorful potatoes, all infused with a savory garlic-Parmesan crust.
Ingredients
- 4 chicken thighs (boneless or bone-in; skinless preferred)
- 4 medium potatoes, diced (Russet or Yukon Gold)
- 1/2 cup grated Parmesan cheese
- 4 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- 1/4 cup chicken broth (low-sodium recommended)
- 2 tablespoons olive oil
- Fresh parsley, chopped, for garnish
Instructions
- In a medium bowl, combine the grated Parmesan, minced garlic, Italian seasoning, and a pinch of salt and pepper. Stir to blend and set aside.
- Spread the diced potatoes evenly across the bottom of the slow cooker.
- Season the chicken thighs with salt and pepper on both sides. Place them in a single layer on top of the potatoes.
- Drizzle the olive oil and pour the chicken broth over the chicken and potatoes.
- Sprinkle the Parmesan–garlic mixture evenly over the chicken, tucking some under the skin if using bone-in thighs.
- Cover and cook on LOW for 6–8 hours until the chicken is tender and falling off the bone.
- Before serving, garnish with chopped fresh parsley.
Notes
For a crispy finish, broil the chicken for 2–3 minutes after slow cooking. Adjust salt after cooking, especially if using regular broth.
