Ingredients
- 4 boneless, skinless chicken breasts
- 1 pound baby potatoes, halved
- 1 cup chicken broth
- 4 cloves garlic, minced
- 1 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions
- Place the halved baby potatoes in the bottom of your slow cooker.
- Lay the chicken breasts on top of the potatoes.
- In a mixing bowl, combine the chicken broth, minced garlic, olive oil, Italian seasoning, salt, and pepper. Whisk until well combined, then pour the mixture over the chicken and potatoes.
- Generously sprinkle the grated Parmesan cheese on top.
- Cover the slow cooker and set it to cook on low for 6-8 hours, or on high for 3-4 hours, until the chicken is cooked through and potatoes are tender.
- When ready to serve, garnish with fresh parsley.

For a creamier consistency, consider adding a splash of heavy cream to the broth mixture.
