Description

A comforting one-pot dish featuring tender chicken and flavorful baby potatoes in a rich garlic and Parmesan broth, perfect for busy weeknights.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 pound baby potatoes, halved
  • 1 cup chicken broth
  • 4 cloves garlic, minced
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish


Instructions

  1. Place the halved baby potatoes in the bottom of your slow cooker.
  2. Lay the chicken breasts on top of the potatoes.
  3. In a mixing bowl, combine the chicken broth, minced garlic, olive oil, Italian seasoning, salt, and pepper. Whisk until well combined, then pour the mixture over the chicken and potatoes.
  4. Generously sprinkle the grated Parmesan cheese on top.
  5. Cover the slow cooker and set it to cook on low for 6-8 hours, or on high for 3-4 hours, until the chicken is cooked through and potatoes are tender.
  6. When ready to serve, garnish with fresh parsley.

Notes

For a creamier consistency, consider adding a splash of heavy cream to the broth mixture.
