Ingredients
- 8 oz orzo pasta
- 1 lb shrimp, peeled and deveined
- 3 tbsp olive oil
- 4 cloves garlic, minced
- 1 lemon, juiced and zested
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the orzo pasta according to the package instructions; drain and set aside.
- In a large skillet, heat olive oil over medium heat until hot.
- Add minced garlic and sauté for about a minute until fragrant.
- Season shrimp with salt and pepper, then add to the skillet. Cook for around 5 minutes until pink and opaque.
- Stir in lemon juice and zest, then add the cooked orzo and mix until well combined and heated through.
- Serve topped with fresh chopped parsley.
Notes
For alternatives, substitute shrimp with chicken or a plant-based protein. Use other small pasta shapes like couscous if orzo is unavailable.
