Description
A cozy, no-fuss casserole combining shepherd’s pie comfort with an easy weeknight preparation.
Ingredients
- 1 lb (450 g) ground beef (80/20)
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup frozen mixed vegetables (peas, carrots, corn)
- 2 tbsp tomato paste
- 1 cup beef broth
- 1 tsp Worcestershire sauce
- Salt and pepper to taste
- 3 cups prepared mashed potatoes (from about 3 large potatoes)
- 2 tbsp butter, cut into small pats
- 1/4 cup shredded cheddar cheese (optional)
Instructions
- Preheat oven to 400°F (200°C).
- In a large skillet over medium heat, add the ground beef. Cook until browned and no pink remains, breaking it into small pieces as it cooks. Drain any excess fat.
- Add chopped onion and minced garlic to the skillet with the beef and sauté for 3–4 minutes until the onion is translucent.
- Stir in the tomato paste, then add beef broth and Worcestershire sauce. Season with salt and pepper.
- Add frozen mixed vegetables and simmer for 5–7 minutes until the sauce reduces slightly.
- Transfer the mixture to a casserole dish and spread evenly.
- Spoon the prepared mashed potatoes over the filling, smoothing to cover the surface. Create texture with a fork if desired.
- Dot the top with butter pieces and sprinkle cheese if using.
- Bake for 20–30 minutes until the top is golden and filling bubbles. Broil for 1–2 minutes for extra browning if desired.
- Let rest for 5 minutes before serving.
