Description

A cozy, no-fuss casserole layering seasoned ground beef and mixed vegetables under a buttery blanket of mashed potatoes.


Ingredients

  • 1 pound ground beef (80/20)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper to taste
  • 3 cups mashed potatoes (prepared from about 3 large potatoes)
  • 2 tablespoons butter, cut into small pieces
  • 1/4 cup shredded cheddar cheese (optional)


Instructions

  1. Preheat the oven to 400°F (200°C). Lightly grease a 9×9-inch casserole dish.
  2. Heat a large skillet over medium heat. Add ground beef and cook until browned, about 6–8 minutes. Drain excess fat if needed.
  3. Add the chopped onion and cook for 3–4 minutes, until softened. Stir in minced garlic and cook for 30 seconds.
  4. Add frozen mixed vegetables, tomato paste, beef broth, and Worcestershire sauce. Season with salt and pepper. Bring to a simmer and cook for 5–7 minutes until the sauce reduces slightly.
  5. Transfer beef mixture to the casserole dish, spreading evenly.
  6. Spoon the mashed potatoes over the filling, smoothing the surface.
  7. Dot the potato surface with butter pieces and sprinkle with cheddar cheese if using.
  8. Bake uncovered for 20–30 minutes until golden and bubbling. Optional: broil for 1–2 minutes for a crisper top.
  9. Let rest for 5 minutes before serving.

Notes

For a lighter version, substitute ground turkey and low-sodium broth. You can use leftover or store-bought mashed potatoes for faster assembly.
