Description

A hearty and cheesy casserole made with beef sausage, eggs, and cheddar, resting on a flaky crescent-roll base. Perfect for brunch or potlucks.

Ingredients

  • 6 large eggs
  • 1 pound beef breakfast sausage
  • 1 cup whole milk
  • 2 cups shredded cheddar cheese, divided
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon dried minced garlic
  • 1/2 teaspoon dried minced onion
  • 1 refrigerated crescent roll dough sheet

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Brown the beef sausage in a skillet over medium-high heat for 7-10 minutes; drain excess grease.
  3. Press the crescent roll dough evenly into the bottom of the baking dish, sealing seams.
  4. In a large bowl, whisk together eggs, milk, pepper, salt, garlic, and onion until well blended.
  5. Fold in the cooked sausage and 1 cup of cheddar cheese into the egg mixture.
  6. Pour the mixture over the crescent roll dough and spread evenly.
  7. Sprinkle the remaining cheddar cheese on top.
  8. Bake for 30-40 minutes until the center is set and the top is golden brown.
  9. Let rest for 5-10 minutes before slicing and serving.

Notes

For a lower-carb version, skip the crescent dough for a crustless casserole. Can be made ahead and refrigerated up to 24 hours before baking.
