Description
Crunchy oven-baked taquitos filled with seasoned shredded chicken and gooey cheese, perfect for busy weeknights and family meals.
Ingredients
- 2 cups cooked, shredded chicken
- 4 oz cream cheese, softened
- 1 to 1¼ cups shredded cheddar or Monterey Jack cheese
- 1–2 teaspoons taco seasoning
- 8–12 small flour or corn tortillas, warmed
- 1–2 tablespoons olive oil (for brushing)
- Salt and black pepper, to taste
Instructions
- Preheat the oven to 425°F (220°C) and line a baking sheet with foil or parchment.
- In a medium bowl, combine the shredded chicken, softened cream cheese, shredded cheese, and taco seasoning. Mix until smooth and season with salt and pepper.
- Warm tortillas for 15–20 seconds in the microwave to prevent cracking.
- Place about 2 tablespoons of filling on one side of a tortilla, roll tightly, and set seam-side down on the baking sheet. Repeat with remaining tortillas and filling.
- Brush each taquito lightly with olive oil and sprinkle with salt and pepper.
- Bake for 15–20 minutes until golden brown and crispy, turning the pan halfway if needed. Serve hot.
Notes
For extra crispiness, finish under the broiler for 1–2 minutes. Adjust seasoning and fillings according to taste preferences.
