Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 2 tsp Italian seasoning
  • 1 cup sun-dried tomatoes, chopped
  • 8 oz cream cheese (full-fat recommended)
  • 1 cup low-sodium chicken broth
  • 2 cups fresh spinach
  • ½ cup grated Parmesan cheese
  • ½ tsp red pepper flakes (adjust based on heat preference)


Instructions

  1. Start by preparing your Crock Pot. Set it on low heat.
  2. Pat dry the chicken breasts. Season them generously with salt, pepper, and Italian seasoning.
  3. Place the seasoned chicken at the bottom of the Crock Pot and scatter the chopped sun-dried tomatoes on top.
  4. In a mixing bowl, combine the softened cream cheese and chicken broth. Stir until smooth, then pour it over the chicken.
