Ingredients
- 4 boneless skinless chicken breasts
- 1 tablespoon olive oil
- Salt and black pepper to taste
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1/2 cup chicken broth
- 1 cup heavy cream
- 3/4 cup grated Parmesan cheese
- 1/2 cup chopped sun-dried tomatoes (in oil, drained)
- 2 cloves garlic, minced
- 1/2 teaspoon crushed red pepper flakes (optional)
- Fresh chopped parsley (for garnish)
Instructions
- Pat the chicken breasts dry and season both sides with salt, black pepper, garlic powder, and Italian seasoning.
- In a skillet, heat the olive oil over medium heat and sear the chicken breasts until golden brown on both sides (about 3-4 minutes per side). This step is optional but adds flavor.
- Transfer the chicken to the slow cooker. Add the chicken broth, heavy cream, Parmesan cheese, minced garlic, chopped sun-dried tomatoes, and crushed red pepper flakes (if using). Stir until well combined.
- Cover and cook on low for 210-240 minutes, until the internal temperature of the chicken reaches 165°F.
- Garnish with fresh chopped parsley and serve hot.
Notes
Feel free to customize the herbs. For a lighter option, use chicken thighs or substitute heavy cream with half-and-half or Greek yogurt.
