Description

A creamy and flavorful pasta dish made effortlessly in a slow cooker, perfect for weeknight dinners or cozy gatherings.


Ingredients

  • 1 ½ pounds boneless, skinless chicken breasts
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • ½ yellow onion, sliced
  • 3 cups low-sodium chicken broth
  • 8 ounces cream cheese, cubed
  • 1 cup shredded Parmesan cheese
  • 12 ounces penne or rotini pasta
  • Fresh parsley for garnish
  • Extra Parmesan cheese
  • Crushed red pepper flakes (optional)


Instructions

  1. Rub the chicken breasts with Cajun seasoning, paprika, garlic powder, salt, and pepper. Optionally marinate for 15–20 minutes.
  2. Place the seasoned chicken in your slow cooker. Add the sliced bell peppers, onion, and chicken broth.
  3. Cover and cook on low for 6–7 hours or high for 3–4 hours.
  4. After cooking, remove the chicken, shred it, and return it to the pot.
  5. Add cream cheese and Parmesan cheese, stirring until melted. Cook an additional 10–15 minutes on low.
  6. Meanwhile, cook the pasta according to package directions until al dente. Drain well and mix into the slow cooker mixture.
  7. Serve garnished with parsley, extra cheese, or crushed red pepper flakes.

Notes

For a lighter version, use reduced-fat cream cheese or Greek yogurt. Allowing the dish to sit for a few minutes after cooking enhances the flavors.
