Ingredients

  • 1.5 lbs chicken thighs (boneless, skinless)
  • 1 cup bourbon
  • 1/4 cup soy sauce (low sodium preferred)
  • 1/4 cup brown sugar
  • 3 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 1 tablespoon ketchup
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • Green onions for garnish


Instructions

  1. In a mixing bowl, combine bourbon, soy sauce, brown sugar, minced garlic, grated ginger, ketchup, black pepper, and red pepper flakes.
  2. Place chicken thighs in the crock pot and pour the bourbon mixture over them, ensuring even coating.
  3. Cover the crock pot and cook on low for 6-8 hours or high for 3-4 hours until chicken is tender and fully cooked.
  4. Shred the chicken if desired and mix back into the sauce.
  5. Serve hot over rice or noodles, garnished with chopped green onions.

Notes

For a thicker sauce, allow it to simmer down towards the end of cooking. Use fresh ginger and garlic for best flavor.
