Ingredients
- 2 pounds chicken wings (split into drumettes and flats if not pre-cut)
- 1 tablespoon olive oil (or another neutral oil)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1 teaspoon salt (adjust to taste)
- 1/2 teaspoon black pepper
- 1/2 teaspoon cayenne pepper (optional)
- 1/2 teaspoon baking powder (aluminum-free preferred)
Instructions
- Preheat the oven to 425°F (220°C). Line a baking sheet with aluminum foil and place a wire rack on top.
- Pat the wings dry with paper towels.
- Toss the wings with olive oil in a large bowl until evenly coated.
- In a small bowl, combine garlic powder, onion powder, smoked paprika, salt, black pepper, cayenne, and baking powder.
- Sprinkle the spice mixture over the wings and toss thoroughly.
- Arrange wings in a single layer on the wire rack, skin-side up.
- Bake for 40-45 minutes, flipping once halfway through.
- Let wings rest for a few minutes before serving.

For gluten-free, ensure baking powder is labeled gluten-free. Experiment with flavors using different spices.
