Description

Indulgent low-carb meatballs in a creamy, herb-filled sauce, perfect for comfort food lovers.


Ingredients

  • 1 pound ground beef or ground turkey
  • 1/2 cup almond flour
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and freshly ground black pepper, to taste
  • 1 cup heavy cream
  • 1 cup fresh spinach, chopped
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 teaspoon red pepper flakes (optional)
  • Fresh basil, for garnish


Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, mix ground meat, almond flour, Parmesan, egg, garlic, Italian seasoning, and 3/4 teaspoon salt with black pepper.
  3. Shape the mixture into 1½-inch meatballs and place on the baking sheet.
  4. Bake for 20–25 minutes until golden and cooked through.
  5. In a skillet over medium heat, simmer heavy cream. Stir in spinach, sun-dried tomatoes, and red pepper flakes. Cook until spinach wilts.
  6. Add meatballs to the skillet and let them simmer in the sauce for 1–2 minutes.
  7. Garnish with fresh basil and serve.

Notes

Using finely ground pork rinds instead of almond flour for a nut-free option. For a milder flavor, use turkey and season aggressively.
