Ingredients
- 8 oz whole wheat pasta
- 2 cups cooked chicken breast, diced
- 1 cup Greek yogurt
- 1 cup grated Parmesan cheese
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook the whole wheat pasta according to the package directions. Once cooked, drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté until fragrant.
- Stir in the diced, cooked chicken and Greek yogurt, blending until smooth.
- Gradually add grated Parmesan cheese, stirring until it melts and combines well.
- Add the drained pasta to the skillet and toss until everything is coated in the sauce.
- Season with salt and pepper to taste, and serve hot, garnished with fresh parsley.
Notes
For quicker prep, use rotisserie chicken. Feel free to adjust the garlic or add lemon juice for freshness.
