Description

A creamy, cheesy, and comforting dish featuring tender chicken, pillowy gnocchi, and crisp bacon, perfect for a weeknight dinner.


Ingredients

  • 34 boneless, skinless chicken breasts (about 1 lb), cut into bite-sized pieces
  • 16 oz fresh or frozen gnocchi
  • 8 oz cream cheese (softened)
  • 2 cups low-sodium chicken broth
  • 4 cups fresh spinach (packed)
  • 1 cup shredded cheddar cheese (reserve a little for garnish)
  • ½ cup crispy bacon bits
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 12 tbsp neutral oil (for searing chicken)


Instructions

  1. Pat chicken dry, season with salt, pepper, garlic powder, and onion powder.
  2. Heat oil in a large skillet over medium-high heat. Add chicken in a single layer and cook until golden, about 5–7 minutes. Remove chicken to a plate.
  3. Lower heat to medium. Add cream cheese and chicken broth to the same skillet. Whisk until the cream cheese melts and the sauce is smooth.
  4. Add gnocchi and spinach to the skillet. Stir to combine, cover, and simmer 5–7 minutes until gnocchi are tender and spinach is wilted.
  5. Return chicken to the skillet, mix in cheddar and bacon, and adjust seasoning. Serve hot, garnished with extra cheese or bacon.

Notes

For a lighter sauce, replace 4–6 ounces of cream cheese with Greek yogurt added off-heat. Adjust sauce thickness with additional broth if needed.
