Description
A creamy, cheesy, and comforting dish featuring tender chicken, pillowy gnocchi, and crisp bacon, perfect for a weeknight dinner.
Ingredients
- 3–4 boneless, skinless chicken breasts (about 1 lb), cut into bite-sized pieces
- 16 oz fresh or frozen gnocchi
- 8 oz cream cheese (softened)
- 2 cups low-sodium chicken broth
- 4 cups fresh spinach (packed)
- 1 cup shredded cheddar cheese (reserve a little for garnish)
- ½ cup crispy bacon bits
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
- 1–2 tbsp neutral oil (for searing chicken)
Instructions
- Pat chicken dry, season with salt, pepper, garlic powder, and onion powder.
- Heat oil in a large skillet over medium-high heat. Add chicken in a single layer and cook until golden, about 5–7 minutes. Remove chicken to a plate.
- Lower heat to medium. Add cream cheese and chicken broth to the same skillet. Whisk until the cream cheese melts and the sauce is smooth.
- Add gnocchi and spinach to the skillet. Stir to combine, cover, and simmer 5–7 minutes until gnocchi are tender and spinach is wilted.
- Return chicken to the skillet, mix in cheddar and bacon, and adjust seasoning. Serve hot, garnished with extra cheese or bacon.
Notes
For a lighter sauce, replace 4–6 ounces of cream cheese with Greek yogurt added off-heat. Adjust sauce thickness with additional broth if needed.
