Description

A creamy, comforting one-skillet dinner combining gnocchi, tender chicken, spinach, and a cheesy, bacon-studded sauce.


Ingredients

  • 34 boneless, skinless chicken breasts (about 1 lb), cut into bite-sized pieces
  • 16 oz fresh or frozen gnocchi
  • 8 oz cream cheese, room temperature
  • 2 cups low-sodium chicken broth
  • 4 cups fresh spinach
  • 1 cup shredded cheddar cheese
  • ½ cup crispy bacon bits
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste


Instructions

  1. Chop the chicken and season with garlic powder, onion powder, salt, and pepper.
  2. Heat 1 tablespoon of neutral oil in a large skillet over medium-high heat. Add chicken and cook until golden brown, about 5–7 minutes. Remove excess oil if needed.
  3. Reduce heat to low, add cream cheese and chicken broth, stirring until smooth.
  4. Add the gnocchi and spinach and cover the skillet. Simmer for 5–7 minutes, until gnocchi are tender.
  5. Uncover and stir in cheddar and bacon bits until cheese is melted. Adjust seasoning as needed.
  6. Serve hot, garnishing with extra cheese or parsley if desired.

Notes

For a lighter version, use reduced-fat cream cheese and half-and-half. Cauliflower gnocchi can be used for a lower-carb option.
