Ingredients

  • 2 tablespoons butter
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 4 cups seafood stock
  • 1 cup heavy cream
  • 8 ounces crab meat
  • 8 ounces shrimp, peeled and deveined
  • 1 teaspoon Old Bay seasoning
  • Salt and pepper to taste

Instructions

  1. Melt the butter in a large pot over medium heat.
  2. Add the chopped onion and minced garlic; sauté until soft and translucent, about 5 minutes.
  3. Stir in the flour and cook for about a minute to form a roux.
  4. Gradually whisk in the seafood stock and bring to a simmer.
  5. Stir in the heavy cream, then add the crab meat and shrimp.
  6. Sprinkle in the Old Bay seasoning, and season with salt and pepper to taste.
  7. Allow the bisque to simmer for 10-15 minutes until heated through and the shrimp are opaque.
  8. Serve hot, garnished with chopped parsley.

Notes

Use fresh seafood for superior flavor. You can add a splash of white wine while simmering to enhance the taste.
