Description
A creamy, lightly sweet bake filled with juicy blueberries, perfect for breakfast, brunch, or a healthy dessert.
Ingredients
- 1 cup cottage cheese (full-fat or low-fat)
- 2 large eggs
- 2 tbsp honey or maple syrup (plus extra for drizzling)
- ½ tsp vanilla extract
- ½ cup rolled oats or oat flour
- ½ tsp baking powder
- Pinch of salt
- ½ cup fresh or frozen blueberries
- Optional: zest of ½ lemon
Instructions
- Preheat the oven to 375°F (190°C). Lightly grease a small baking dish (about 6×6 inches) or line with parchment.
- In a blender or food processor, add cottage cheese, eggs, honey (or maple syrup), vanilla, oats (or oat flour), baking powder, and a pinch of salt. Blend until smooth and creamy.
- Transfer the batter to a bowl. Gently fold in the blueberries and lemon zest.
- Pour the batter into the prepared dish and smooth the top.
- Bake for 25–30 minutes, until the edges are golden and the center is set.
- Let the bake rest for 5–10 minutes before slicing. Serve warm or at room temperature with an extra drizzle of honey or maple syrup.
Notes
Best enjoyed warm with Greek yogurt or whipped cream. Can be stored in an airtight container for 3-4 days or frozen for up to 1 month.
