Ingredients
- 3 ripe bananas
- 1/3 cup melted butter
- 1 teaspoon baking soda
- A pinch of salt
- 3/4 cup sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 tablespoon ground cinnamon
- 1/4 cup sugar (for the swirl)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 4×8 inch loaf pan.
- Mash the ripe bananas with a fork until smooth.
- Stir the melted butter into the mashed bananas until well combined.
- Mix in the baking soda and a pinch of salt.
- Incorporate the sugar, egg, and vanilla extract, stirring until combined.
- Gently mix in the flour until just incorporated; avoid overmixing.
- In a small bowl, blend the ground cinnamon with 1/4 cup of sugar.
- Pour half of the batter into the prepared loaf pan, then sprinkle with half of the cinnamon-sugar mixture.
- Layer the remaining batter on top, finishing with the rest of the cinnamon-sugar.
- Use a knife to gently swirl the batter.
- Bake for 60-65 minutes or until a toothpick inserted in the center comes out clean.
- Allow the bread to cool in the pan for a few minutes before transferring it to a wire rack.

For added flavor, consider incorporating nuts or chocolate chips. Store in an airtight container for up to three days or freeze individual slices for longer storage.
