Description

A delightful blend of cinnamon rolls and banana bread, this moist loaf is perfect for brunch or an afternoon snack.


Ingredients

  • 3 overripe bananas, mashed (about 1 1/2 cups)
  • 1/2 cup melted vegan butter (or regular butter if not vegan)
  • 1/2 cup maple syrup (honey works if you aren’t strictly vegan)
  • 1 cup unsweetened almond or oat milk (soy or coconut milk acceptable)
  • 1 tsp pure vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp fine salt
  • 2 cups all-purpose flour (or a 1:1 gluten-free flour blend)
  • 1 cup old-fashioned rolled oats (quick oats can be used)
  • 1/4 cup packed light brown sugar (for swirl)
  • 1 cup powdered sugar (for frosting)
  • 8 oz softened vegan cream cheese (or regular cream cheese if not vegan)
  • 1/4 cup melted vegan butter (for frosting)


Instructions

  1. Preheat your oven to 350°F (175°C) and grease and line a 9×5-inch loaf pan with parchment paper.
  2. In a large bowl, mash the bananas until mostly smooth.
  3. Stir the melted vegan butter into the mashed bananas, then add in the maple syrup, milk, and vanilla. Whisk until combined.
  4. In a separate bowl, whisk together the flour, oats, baking powder, baking soda, cinnamon, and salt.
  5. Gently fold the dry mixture into the wet mix until just combined—be careful not to overmix!
  6. For the cinnamon swirl, combine brown sugar and cinnamon in a small bowl.
  7. Spoon half of the batter into the prepared pan and sprinkle with half of the cinnamon-sugar. Add the remaining batter, topping it with the rest of the cinnamon-sugar. Swirl lightly with a knife for that classic cinnamon roll look.
  8. Bake for 50–65 minutes, or until a toothpick inserted in the center comes out clean.
  9. Let it cool in the pan for 10–15 minutes before lifting it out to cool completely on a wire rack.
  10. For the frosting, beat together softened vegan cream cheese and melted vegan butter until smooth. Gradually add powdered sugar to achieve your desired consistency.
  11. Spread the frosting over the cooled loaf, slice it up, and enjoy!

Notes

Store in an airtight container at room temperature for up to 3 days. For longer storage, refrigerate for up to a week or freeze slices wrapped tightly for up to 3 months.
