Ingredients
- 3 ripe bananas, mashed
- 1/3 cup melted butter
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- Pinch of salt
- 3/4 cup sugar
- 1 large egg, beaten
- 1 teaspoon cinnamon
- 1 cup all-purpose flour
- 1/4 cup sugar (for topping)
- 1 teaspoon cinnamon (for topping)
Instructions
- Preheat your oven to 350°F (175°C) and grease a muffin tin.
- In a mixing bowl, combine the mashed bananas with the melted butter.
- Stir in the sugar, beaten egg, and vanilla extract until fully incorporated.
- Sprinkle the baking soda and salt over the banana mixture, and gently fold in the flour and cinnamon until just combined.
- Spoon the batter into the muffin tin, filling each cup about two-thirds full.
- In a small bowl, mix the 1/4 cup sugar and 1 teaspoon cinnamon together. Sprinkle this mixture over the muffins.
- Bake for approximately 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool for a few minutes in the tin before transferring them to a wire rack.
Notes
For extra flavor, consider adding chopped nuts or chocolate chips to the batter. Store in an airtight container for up to 3 days.
