Description
Warm, cheesy burritos filled with crispy tater tots, seasoned ground beef, and two kinds of melty cheese, all wrapped in soft flour tortillas.
Ingredients
- 1 pound ground beef (or ground turkey or plant-based crumble)
- 2 cups frozen tater tots, cooked until golden and crushed
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 cup sour cream
- 1/4 cup chipotle sauce
- 6 large flour tortillas
- Salt and freshly ground black pepper, to taste
- Optional garnishes: diced tomatoes, chopped green onions, cilantro
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the tater tots according to package directions until golden and crispy. Let cool slightly, then crush them gently.
- Heat a skillet over medium heat. Add the ground beef, season with salt and pepper, and cook until no pink remains. Drain excess fat.
- In a large bowl, combine the browned beef, slightly crushed tater tots, cheddar, and Monterey Jack. Mix well.
- Warm the tortillas in a skillet or microwave for 10–15 seconds.
- Spoon filling down the center of each tortilla, drizzle with chipotle sauce, and dot with sour cream.
- Fold the sides of the tortilla in, then roll bottom up to form a burrito. Place seam-side down in a lightly oiled baking dish.
- Sprinkle extra cheese on top and bake for 5–7 minutes.
- For a crispy exterior, switch to broil and broil for 1–2 minutes.
- Garnish with toppings and serve immediately.
Notes
You can swap the tater tots with breakfast potatoes for a breakfast version. Adjust cheese for dietary preferences.
