Description

A creamy and hearty bowl of Cajun Potato Soup featuring andouille sausage and robust Cajun spices, perfect for cozy family dinners.


Ingredients

  • 1 pound andouille sausage
  • 4 medium potatoes, diced
  • 1 onion, chopped
  • 2 celery stalks, diced
  • 1 bell pepper, diced
  • 3 cloves garlic, minced
  • 2 tablespoons Cajun spice blend
  • 1 cup heavy cream
  • 2 cups chicken broth
  • Salt and pepper to taste
  • Optional: extra cheddar cheese for garnish


Instructions

  1. In a large pot over medium heat, cook the andouille sausage until browned. Remove and set aside.
  2. In the same pot, add the onions, celery, and bell pepper. Sauté until softened, about 5-7 minutes.
  3. Add the garlic and cook for another minute until fragrant.
  4. Stir in the Cajun spice blend and cook for an additional minute to release the flavors.
  5. Add the diced potatoes and chicken broth. Bring to a boil, then reduce the heat and let simmer until the potatoes are tender, roughly 15-20 minutes.
  6. Stir in the heavy cream and cheddar cheese, and return the sausage to the pot. Season with salt and pepper to taste.
  7. Allow the soup to simmer for a few more minutes until everything is heated through.
  8. Serve hot, garnished with additional cheese if desired.

Notes

For a vegetarian version, swap andouille sausage with plant-based sausage and use vegetable broth.
