Description
A fast and elegant dish featuring grilled or baked chicken topped with fresh tomato, basil, and melted mozzarella.
Ingredients
- 2 boneless, skinless chicken breasts (about 6–8 oz each)
- 2 fresh tomatoes, diced (Roma or vine-ripe)
- 1/4 cup fresh basil leaves, chopped
- 1/2 cup mozzarella cheese, shredded or thinly sliced
- Olive oil (for brushing and for the tomato mix)
- Salt and pepper (to taste)
- Balsamic vinegar (optional for drizzling)
Instructions
- Preheat your grill or oven to medium heat (about 375°F).
- Lightly drizzle olive oil over the chicken breasts. Season both sides generously with salt and pepper.
- Grill the chicken about 6–7 minutes per side, or bake in the oven 25–30 minutes, until the internal temperature reaches 165°F and juices run clear.
- While the chicken cooks, combine the diced tomatoes and chopped basil in a bowl. Add a drizzle of olive oil and a pinch of salt and pepper; toss gently.
- When the chicken is done, remove it from the heat. Spoon a generous portion of the tomato-basil mixture over each breast.
- Sprinkle mozzarella on top of the tomatoes. Return the chicken to the grill or oven for 2–3 minutes until the cheese melts and becomes slightly bubbled.
- Serve immediately, finishing with a drizzle of balsamic vinegar if desired.
Notes
Use fresh tomatoes for the best texture. Thin chicken cutlets or boneless thighs can be substituted, adjusting the cooking time as needed.
