Description

Juicy, bone-in chicken thighs with crispy skin, roasted to perfection with a simple five-spice rub.


Ingredients

  • 4 bone-in chicken thighs (about 1.52 pounds total)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika (or regular paprika)
  • Salt and pepper to taste (about 1 teaspoon salt total)


Instructions

  1. Preheat oven to 425°F (220°C) and position a rack in the middle.
  2. Pat the chicken thighs dry with paper towels and arrange them skin-side up in a baking dish or rimmed sheet pan.
  3. Drizzle the olive oil evenly over the thighs and rub it to coat the skin lightly.
  4. In a small bowl, mix garlic powder, onion powder, smoked paprika, salt, and pepper.
  5. Rub the spice blend evenly over the skin and sides of the chicken.
  6. Bake for 35–40 minutes, until the skin is golden and an instant-read thermometer reads 165°F (75°C).
  7. Let rest for 5 minutes before serving.

Notes

For a crispier skin, make sure the chicken is patted dry before applying oil and spices. Broil for 1–2 minutes at the end for extra crispiness if desired.
