Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 3/4 cup brown sugar
- 2 large eggs
- 3 ripe bananas, mashed
- 1 teaspoon vanilla extract
- 1 cup fresh blueberries
Instructions
- Preheat your oven to 350°F (175°C). Grease a standard loaf pan and line it with parchment paper.
- In a medium bowl, whisk the flour, baking soda, and salt until combined.
- In a large bowl, cream the butter and brown sugar until fluffy. Beat in the eggs one at a time, then stir in the mashed bananas and vanilla.
- Gradually mix the dry ingredients into the wet mixture until just combined. Gently fold in the blueberries.
- Pour the batter into the prepared loaf pan and smooth the top. Bake for about 60 minutes, checking for doneness with a toothpick.
- Allow the bread to cool in the pan for 10-15 minutes before transferring it to a wire rack to cool completely.
Notes
Use really ripe bananas for best results. If using frozen blueberries, toss them in a bit of flour before folding them into the batter.
