Description

A delightful twist on classic banana bread, combining sweet bananas and tart blueberries for a moist, flavorful loaf that’s perfect for any occasion.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 2 large eggs
  • 3 ripe bananas, mashed
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries


Instructions

  1. Preheat your oven to 350°F (175°C). Grease a standard loaf pan and line it with parchment paper.
  2. In a medium bowl, whisk the flour, baking soda, and salt until combined.
  3. In a large bowl, cream the butter and brown sugar until fluffy. Beat in the eggs one at a time, then stir in the mashed bananas and vanilla.
  4. Gradually mix the dry ingredients into the wet mixture until just combined. Gently fold in the blueberries.
  5. Pour the batter into the prepared loaf pan and smooth the top. Bake for about 60 minutes, checking for doneness with a toothpick.
  6. Allow the bread to cool in the pan for 10-15 minutes before transferring it to a wire rack to cool completely.

Notes

Use really ripe bananas for best results. If using frozen blueberries, toss them in a bit of flour before folding them into the batter.
