Description

Irresistible potato wedges that are golden outside and tender inside, perfect for any occasion.


Ingredients

  • 32 oz waxy potatoes (about 4 large potatoes, Yukon Gold or red)
  • 1½ teaspoons paprika (smoked or sweet)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Sea salt, to taste
  • Freshly ground black pepper, to taste
  • Low-fat cooking spray or olive oil (a light drizzle or a few sprays)


Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with foil or parchment for easier cleanup.
  2. Wash the potatoes thoroughly to remove dirt and pat them dry.
  3. In a small bowl, combine 1½ tsp paprika, 1 tsp garlic powder, and 1 tsp onion powder. Mix evenly.
  4. Cut each potato in half lengthwise, then cut each half into 3–4 wedges.
  5. Place wedges in a large bowl. Spray lightly with cooking spray or drizzle with about 1–2 tablespoons olive oil. Toss to coat.
  6. Sprinkle the spice mix over the potatoes and toss again. Season with sea salt and freshly ground black pepper to taste.
  7. Arrange wedges in a single layer on the prepared baking sheet with cut sides down.
  8. Bake for 35–40 minutes, turning once halfway through, until wedges are golden and a knife pierces easily.
  9. Remove from oven, taste for seasoning, and serve hot.

Notes

For extra crispiness, broil for 1–2 minutes after baking. Store leftovers in an airtight container for up to 3–4 days.
